The Marston’s Group, one of the UK’s leading independent brewing and pub retailing businesses and the largest brewer of cask beer in Britain, decided to overhaul its kitchen design and specification as its focus switched to investing more in new-build pub restaurants than wet-led pubs.

Serving 30 million meals a year across 1,600 outlets, Marston’s made major changes in refrigeration and the cookline, appointing Lincat as sole supplier following a tender process, which included two extensive equipment trials.

Lincat now supplies 68 different items of catering equipment to the Marston’s Group, a total of 1,695 pieces since 2013. In this time, profit generated per pub has grown to an average of £100,000 – a rise of 40% from £70,000 in 2012. And, with at least 20 new-build pubs on the horizon for 2016, the equipment supplied is set to grow even further.

Colin Mackenzie, Marston’s Head of Corporate Services Procurement, explains why Lincat met their high standards …

“The stand-out point on the cook line was the Opus (Vortech) fryer, which is a very energy efficient piece of equipment that produces less exhaust gas heat in the kitchen and faster recovery times.

“Added to that was an option for automatic filtration of oil which, when combined with energy savings, provided payback in nine months. None of these changes resulted in a cost saving on the purchase price – quite the opposite in fact. For example, the fryers we specify cost over three times more than the previous unit, but the key to it is total life cost.”
