Lincat has launched Air0, a new commercial air fryer designed to enable operators to serve fried food in locations where traditional frying equipment has previously been impractical due to space, infrastructure and operational constraints.  

The Air0 also enhances capability within existing kitchens, supporting expanded menu options including allergen separation, vegetarian and vegan dishes, and healthier children’s menus. 

Built around the principle of “ZERO added Oil. ZERO Hassle. ZERO Compromise.”, Air0 is engineered to deliver the results of a conventional tabletop fryer—without the need for oil, ventilation or installation. 

The launch is underpinned by a clear positioning from Lincat:
“Why fry, when there’s ZERO Compromise with Air0.” 

Designed to remove traditional barriers 

Air0 operates via a standard 13amp plug-and-play connection and requires: 

  • No cooking oil requirement  
  • No ventilation system 
  • No installation  
  • No hard wiring 
  • No water or drain connection 
  • No 18+ skilled operator  
  • No oil handling, reducing mess and safety risks  

Despite this simplified setup, Lincat states the unit delivers performance comparable to a conventional tabletop fryer, with consistent output and no variability caused by oil degradation or missed oil changes. 

The Air0 supports cook-on-demand operation and includes an eco mode to reduce energy consumption during quieter service periods. 

Consistent performance and results 

Air0 has been engineered to deliver reliable, repeatable results across core menu items. Testing shows: 

  • Cook time for fries (4 minutes 10 seconds), -20 seconds over fryer 
  • Just 15–20 seconds variance across other products  

Compared to oven cooking, results demonstrate: 

  • 24% increased crispiness  
  • 44% improved colour  

Independent testing cooking in AIR0 versus a conventional fryer reports: 

  • Up to 62% less fat  
  • Up to 28% fewer calories  

Target markets and applications 

Air0 is aimed at operators that have traditionally struggled to justify frying equipment due to cost, space or infrastructure limitations, including wet-led pubs, café bars, grab-and-go outlets, kiosks in leisure venues such as cinema’s. It also has wider applications across convenience retail and forecourts, hotels and limited-service hospitality, contract catering and workplace dining, education and healthcare settings, as well as events, pop-ups, mobile catering, stadia and transport hubs.  

Expanding capability in kitchens 

Air0 also enables operators to extend capability within kitchens. 

By removing oil requirements, it supports greater menu flexibility, including: 

  • Healthier menu development and children’s options  
  • Separation of vegetarian and vegan cooking  
  • Improved allergen control and reduced cross-contact risk  

This allows operators to broaden their offer while maintaining operational simplicity.
