Celebrating National Vegetarian Week, which runs from 16th -22nd May 2022, Lincat prepared meat- free recipes using their flagship equipment- Opus 800 and Fri Fri Precision Fryer!

Beetroot Falafel with Mint Salad, Coconut Yoghurt and Dukkah:

Ingredients:

For Falafel (6-8 patties)

  • 50g Beetroot
  • 2 Medium Carrots
  • 2 Shallots
  • 400g Chickpeas (tinned, weight before draining)
  • 1 Tbsp Harissa paste
  • 1 tsp Ground Coriander
  • 1 ½ tsp Ground Cumin
  • 2 Garlic Cloves
  • 150g Chickpea Flour (or Gluten Free Flour)
  • 1 tsp Salt

For Dukkah

  • 5g Pistachios
  • 5g Almonds
  • 5g Sesame seeds (black Sesame seeds work really well)
  • 5g Coriander seeds
  • 2g Cumin seeds
  • ½ tsp Sea Salt
  • A Pinch of Chilli Flakes

For Mint Salad

  • 250g Mixed Leaves
  • 1 Red Onion
  • 1 Handful of Mint
  • 1 Handful of Flat Leaf Parsley
  • 2 Tbsp lemon Juice
  • 4 Tbsp Extra Virgin Olive oil
  • Salt and Pepper to taste
  • Coconut Yoghurt (Greek Yoghurt works just as well)

Method:

For Falafel

  1. Grate the Beetroot, Carrot and Garlic into a bowl.
  2. Mix in all other ingredients
  3. Place mixture into a Food Processor and pulse into a chunky mixture. If in doubt, try to compress some of the mixture, if it holds its shape you’re there!
  4. Divide the mixture into balls (6-8, depending how big you want them), place each ball on a surface and gently press on top to create a patty. Cup your hands around the sides and twist gently, this will make the patty more round and seal any breakages you may have.
  5. Set aside in the Fridge, to firm up for 10 minutes (they can be fried straight away, if you’re in a rush).
  6. Place in the Fryer at 175⁰C for 3 minutes.
